The granddaughter of an experienced cook, my grandmother was employed in the biggest houses in Brussels between 1925 and 1940. She crossed paths with many famous people and the entourages of royalty.
A 7 or 8-course menu was a regular occurrence for her.
She passed on to me her passion and above all the duty to use the best products and to respect the seasons as much as possible.
Before being a job, cooking is above all a passion, a true art. My imagination is always creating things.
I am not the perfectionist master cook who is at the forefront of the latest technical advances in cooking, nor even one who follows the latest trends.
No! My menus and my achievements are as passionate, instinctive and generous...as I am. Just because I love to love.
"Eating well" has become a fashion! The debates are multiplying between carnivores, flexitarians, vegetarians, vegans and other philosophies or struggles against this or that food aberration. To be on trend, you owe it to yourself to "eat well" ... But what exactly does that mean? Here too, the debate is ongoing.
Personally, I am a flexitarian! Because of my work as a cook, I cannot claim to be vegetarian and even less so vegan, because I often have to cook and taste my meals based on animal products.
In my kitchen, I respect the choices of everyone and I can prepare you a dish or a dessert based solely on vegetable products, but if you wish to eat meat or fish...this is up to you.
Epicurean!...It's a word used, in my humble opinion, by too many people who don't really know its meaning...
It's above all a matter of thinking and making the best of life, of the pleasures it can bring, simple, natural and above all essential for a good balance and serenity of body and mind.
Greedy! Oh yes! But in the right way...And as my grandmother always said, "Never trust someone who doesn't love (and not even "like") to eat...Being greedy is just a personal limit and discipline...
Eat well, drink well, love well...But reasonably.”
